Responsibilities
- Cut, trim, clean, skin, and otherwise prepare standard cuts of chicken, meat, bacon, beef, shrimp, and fish to prepare the customer’s food order.
- Grind meat and slice cooked meats using powered grinders and slicing machines as per requirement.
- Weigh the meat and label the weights and contents of the containers.
- Manage inventory, deciding on the quantity, range, and freshness of products based on the needs of the business and its clients.
- Ensure that the storage of meat is in a clean and healthy environment and in accordance with the restaurant’s established standards.
- Use knives, cleavers, meat saws, bandsaws, or other equipment to perform meat cutting and trimming.
- Follow food safety guidelines and make sure food storage conditions are suitable.
- Shape, lace, and tie meats and may wrap or package fresh or frozen or prepared meats.
